Quinoa Summer Salad [Recipe]


A while ago a neighbor shared this recipe with me.  It quickly became a regular in our house.  I love this recipe because 1- when it’s about a million degrees I don’t want to eat something hot, 2- it’s a great meat-free meal, and 3- it’s delicious!  The quinoa is packed with protein and while avocados are a calorie dense fruit, they provide heart healthy monounsaturated fats and are filled with vitamins.  It’s not a Make Ahead Meal, but this recipe requires close to no prep work so it makes a great last minute dinner.  This recipe is for two servings.

Here’s what you need:
1 cucumber (peeled)
1/4 C grape tomatoes
1/2 avocado
1/8 C red onion
lemon juice
1 1/2-2 C quinoa (cooked)
salad dressing of your choice (optional)




Cut up cucumber, tomatoes, avocado, and onion.



Mix cucumber, tomatoes, avocado, and onion in a bowl.  Add lemon juice (I usually use about 1/2 a lemon’s worth, but you can add as much or little as you like).



Serve over quinoa and add salad dressing if desired.  Raspberry vinaigrette is my fave.
