Tilapia & Peachy Quinoa [Recipe]
Another quinoa recipe! Can you tell I’m feeling the quinoa these days? This is another great summer recipe. I saw this recipe in Parents Magazine and had to give it a try! Full disclosure: the original recipe is for salmon and peachy quinoa, but mommy brain got the best of me and I picked up tilapia instead. Feel free to use whichever fish you prefer!
Here’s what you need:
1/2 C uncooked quinoa
1 T lime juice
1 1/2 t honey
3/4 t grated ginger
1/4 t salt
2 T olive oil
1 peach [pitted & chopped, about 2/3 C]
1 small green bell pepper [chopped]
tilapia [or salmon]
Cook quinoa. Combine lime juice, honey, ginger, and salt. Whisk in olive oil. Set aside 1 T of this mixture.
Combine peach, bell pepper, quinoa, and vinaigrette mixture in bowl.
Place tilapia in a baking dish and coat with remaining vinaigrette. Cook at 425 for 8-12 minutes or until the fish begins to flake when tested with a fork.
I served mine with sauteed spinach. Yum!
